Roast Beef...in the air fryer?!

Yep - you read that right! For months people have been asking if I can make a decent roast dinner in the US and I have a lot to say on this topic... but the closest I've come to 'authentic' so far has been the air fryer recipe that I got in this book that you can get on Amazon (and I love and cook from regularly).
I've done it with a couple of different cuts of beef here and I think a 'round cut' is the most similar. I also adapted the timings I'm not sure if my air fryer is super hot but it takes a lot less time than the book says for me. Which makes it possible to make a full roast dinner in less than 2 hours which is WILD!
I take a 2.2lb piece of beef, rub it in olive oil and lots of salt and pepper and put it in the air fryer (roast setting if you have it) at 395F for 5 minutes, then reduce the temperature to 350F for 15 minutes and then reduce again to 290F and this is where you keep an eye on it depending how well done you want it. I like mine pink and last time it took another 15-20 at the low temp but just keep going here until you're happy and then, of course, leave it to rest for as long as you can covered in foil before you serve to make sure it's nice and tender. It will stay hot for ages!
It's a sure fire crowd pleaser - let me know if you want the recipes for all my traditional sides too but any kinds of veg and potato are pretty acceptable!
I'll try something American next!!

Which air fryer do you use? I want to try this! I live in Fort Lauderdale, and it's way too hot for me to be heating up my regular oven right now to bake or roast anything. I also need to find a scale that measures grams. As an American......I don't really know how to follow the recipes in the cookbook in grams yet, but I want to, because they all look delicious!
