I've managed to get them prettyyyyyy authentic!
To make 10-15 bitesize sausage rolls, you will need:
2 packs Johnsonville Original breakfast sausages
1 pack frozen puff pastry sheets
1 egg
Roll out your pastry sheets to about 1/2 - 2/3 the thickness it arrived in and preheat your oven to 390F.
Take the skins off your sausages and mix all the meat together (you can add extra herbs/seasonings/chutneys to the mix if you would like but it certainly doesn't need it)
Take a baseball sized lump of the meat and roll into a sausage shape, I like it just a touch thicker than a regular dinner sausage (think of a fat 'italian' or 'bratwurst')
Once you have a sausage the length of the short side of your pastry, lay it across the pastry about 1.5 inches away from the edge.
Take the edge and carefully wrap it over the sausage, nice and tight, roll until you have a millimeter overlap and cut the pastry. Pinch the overlap to make sure it's sealed.
Continue steps 3-5 until all of your meat is used up then place your long rolls seam side down on a lined baking tray.
Use a sharp knife to delicately cut them to the desired length - I like bitesize and one roll should make 5/6 bitesize chunks. Score the top of each chunk in the middle with your knife.
As long as your sausages weren't frozen, you can freeze or refridgerate the rolls like this until you want them (since they're best served fresh out the oven).
When ready, beat an egg and egg wash the tops of the rolls then place them in the oven at 390F for around 25 minutes. They're done when the tops are golden and the inside is no longer pink.
If you're cooking them from frozen, or if you're making longer rolls, adjust cooking time accordingly. You can also freeze once cooked but they won't be as crispy when you reheat.
These are often eaten on the go in the UK but if you are home, get yourself some HP Brown Sauce to dip them in for the full Brit experience!
If you're a visual person I have a couple of videos making these on my Tik Tok page - head to the British Cooking highlight at the top of my profile and scroll to find sausage rolls.
Let me know if you make them!
